Chiffon is one...Hi Kismet, sorry about the failure. Chiffon is one of the fragile cakes to do but once you have perfected it, it is so easy and addictive.<BR/><BR/> There are some reasons why chiffon cake fails to rise and most common scenario is on the eggwhite where the texture of chiffon cake depends on. Few tips on working with eggwhites:<BR/>- eggs should be at room temperature,wash the eggs and wipe dry so that there is not a drop of water gets into the eggwhite.<BR/>-Make sure the mixing bowl is completely dry and dust-free<BR/>-Add sugar little by little at soft peak, continue beating until stiff peak and do not over beat.<BR/><BR/>- when folding in the egg white to the yolk mixture, do not overmix it as you have to keep air(from the eggwhite) as much as possible. Overmixing it would liquify the mixture and you'll end up like a pie.<BR/><BR/>Chiffon cake is very sensitive when it comes to timing (i.e. make sure that the oven has been pre-heated before you start mixing so that the cake mixture dont stay too long at room temperature) <BR/><BR/>Once the cake mixture is in the oven, do not open it every now and then to check, wait for atleast 45 minutes to check if it is done.<BR/><BR/>It is also recommended that once the cake is done, switch off the oven and keep the cake inside until it cools to room temperature to avoild sudden change of temperature.
